  • Dijon mustard: This recipe assumes a US Dijon mustard (smooth, mild, slightly sweet). Dijon manufactured for the European market is sharper and less sweet; begin with less and adjust.

How to Make Keto Mac and Cheese

  1. Prep the ingredients

Set the cream cheese on the counter until softened, and shred the cheddar, Gruyere, and Parmesan from blocks.

Bring a large pot of water to a boil, and have a colander ready near the sink.

  2. Boil the keto pasta

Salt the boiling water, add the keto elbow pasta, and cook it just until tender.

Start checking one to two minutes early, because keto pasta can turn mushy fast.

Drain well, and set the pasta aside while you finish the sauce.

  3. Build the cream base

Melt the butter in a large skillet or saucepan over medium-low heat, then add the minced garlic.

Cook for about 30 seconds, just until fragrant, and do not let the garlic brown.

Whisk in the heavy cream, softened cream cheese, Dijon, garlic powder, onion powder, salt, and pepper.

Cook gently, whisking, until the cream cheese melts and the sauce looks smooth.

  4. Melt in the cheeses

Lower the heat, then add the cheddar, Gruyere, and Parmesan a handful at a time.

Whisk after each addition until fully melted before adding more cheese.

Low heat keeps the sauce glossy and helps prevent a separated, greasy finish.

  5. Combine pasta and sauce

Add the drained pasta to the sauce, and fold gently until every piece is coated.

During testing, this flourless sauce stayed smoother than roux-based versions with keto pasta.

If the mixture looks tight, stir in a small splash of heavy cream.

  6. Serve while hot

Taste and adjust the seasoning, then serve the mac and cheese right away.

Keto pasta firms as it cools, so the texture is creamiest when served immediately.

Finish with extra Parmesan and black pepper if you want a simple garnish.

Substitutions

Gruyere for fontina
Fontina melts just as smoothly and keeps the sauce rich. The flavor is slightly sweeter and less nutty.
Cream cheese for mascarpone
Mascarpone gives the sauce an even silkier texture and a mild dairy sweetness. It makes the finished dish feel extra lush.
Keto elbow pasta for hearts of palm pasta
Hearts of palm pasta creates a lighter, veggie-forward bowl with the same low-carb focus. Pat it dry well, so the sauce stays creamy.

Tips

Shred cheese from blocks
Pre-shredded cheese often carries starches that block smooth melting. Fresh shreds gave the silkiest sauce during testing.
Soften the cream cheese first
Room-temperature cream cheese blends faster into hot cream. That cuts whisking time and prevents tiny lumps.
Use medium-low heat
High heat can make the fat split from the cheese. Keep the pan gentle once the dairy is combined.
Undercook the pasta slightly
Keto pasta keeps absorbing moisture after draining. Stop cooking at just-tender, so it stays pleasant after mixing.
Loosen just before serving
If the mac and cheese sits, the sauce will tighten. Stir in a tablespoon or two of cream before plating.

FAQ

Why did my cheese sauce turn greasy or separate?
The heat was likely too high when the cheese went in. Remove the pan from the burner, whisk gently, and add a splash of cream.
Why did the pasta get mushy?
Keto pasta cooks faster than expected and softens more as it sits. Start tasting early, then drain as soon as it turns tender.
How do I fix sauce that seems too thick?
Keto pasta absorbs sauce quickly, especially as it cools. Stir in heavy cream, one tablespoon at a time, until it loosens.
Can I make this ahead for a party?
It is best right after mixing, when the sauce is loosest. For make-ahead service, rewarm it gently with extra cream and stir often.
