  • Dijon mustard: This recipe assumes a US Dijon mustard (smooth, mild, slightly sweet). Dijon manufactured for the European market is sharper and less sweet; begin with less and adjust.

How to Make Lobster Mac and Cheese

  1. Boil the pasta

Bring a large pot of water to a boil and add the salt.

Cook the cavatappi until just shy of al dente, then reserve 1 cup pasta water and drain.

  2. Season the lobster

Toss the lobster with 1 tablespoon butter and the lemon zest.

Set it aside so the meat stays tender and ready for the finish.

  3. Make the roux

Melt 4 tablespoons butter in a large skillet or Dutch oven over medium heat.

Cook the shallot for 2 minutes, add garlic, then whisk in the flour for 1 minute.

  4. Build the cheese sauce

Slowly whisk in the warm milk and half-and-half until the sauce looks smooth.

Stir in Dijon, white pepper, salt, and paprika, then simmer until slightly thickened.

Lower the heat and stir in Gruyere, cheddar, and Parmesan until fully melted.

  5. Combine pasta and lobster

Fold in the drained pasta and add a splash of reserved pasta water if needed.

Gently fold in the lobster just before serving so it stays soft and juicy.

  6. Toast the topping and serve

Mix the panko with the melted butter and toast it in a small skillet until golden.

Spoon the mac and cheese into bowls, top with crumbs, and finish with chives.

Substitutions

Cavatappi for shells or elbow macaroni
Both shapes hold the sauce well and keep the dish creamy. Shells offer little pockets for extra cheese.
Gruyere for fontina
Fontina melts beautifully and gives the sauce a buttery, mild finish. It makes the flavor a bit softer.
Panko for crushed kettle chips
Crushed plain chips add salty crunch and a fun steakhouse feel. Toast them lightly so they stay crisp.

Tips

Shred the cheese fresh
Bagged cheese often contains anti-caking starches. Fresh shreds melt faster and make a silkier sauce.
Warm the dairy first
Cold milk can tighten the roux and slow thickening. Warm dairy blends in smoothly and keeps the sauce glossy.
Stop before overcooking pasta
Slightly undercooked pasta finishes in the sauce. That keeps the final texture tender, not mushy.
Add lobster at the end
Lobster turns firm fast in hot sauce. Folding it in last keeps the meat sweet and tender.
Toast crumbs to a deeper gold
Pale crumbs soften quickly on creamy pasta. Deep golden crumbs stay crunchier and taste more buttery.

FAQ

Why did my cheese sauce turn grainy?
The heat was likely too high when the cheese went in. Pull the pan low, then stir slowly with freshly shredded cheese.
How do I keep the lobster from getting rubbery?
Use fully cooked lobster and warm it only at the end. Long simmering makes the meat tight and chewy.
Can I make this ahead for guests?
Make the sauce and pasta ahead, but store them separately. Reheat gently with pasta water, then add lobster and crumbs.
What should I do if the sauce gets too thick?
Whisk in reserved pasta water, a few tablespoons at a time. The starch loosens the sauce without making it watery.

Serving Suggestions

Extra chives and a small squeeze of lemon brighten the rich cheese and lobster.

A crisp green salad or roasted asparagus gives this pasta a fresh, balanced plate.

For a dinner-party look, serve it in warm shallow bowls with extra toasted crumbs on top.
