This cream of mushroom hamburger rice casserole is cozy, creamy, and packed with hearty flavor in every bite.
It’s an easy, family-friendly bake that’s perfect for busy weeknights, potlucks, or a casual Sunday dinner.

Preheat your oven to 350°F and position a rack in the center.
Lightly grease a 9x13 inch baking dish with cooking spray or a thin layer of oil.
Place the uncooked rice in a fine-mesh strainer and rinse under cold water until the water runs mostly clear.
Drain the rice well so extra water does not throw off the casserole texture.
Set a large skillet over medium-high heat and add the ground beef and diced onion.
Cook, breaking up the meat, until the beef is browned and the onion is softened, about 7 to 9 minutes.
Drain off any excess grease to keep the casserole from feeling heavy or greasy.
Stir in the salt, black pepper, and diced green chilies, mixing until everything is evenly distributed.
Turn off the heat and let the mixture cool slightly while you assemble the casserole base.
In a large bowl, whisk together the cream of mushroom soup, sour cream, water or broth, and rinsed rice.
Stir until the rice is coated and the mixture looks smooth and evenly combined.
Spread the rice and soup mixture evenly in the prepared baking dish, making sure it reaches into the corners.
Scatter the cooked beef and onion mixture evenly over the top, then gently stir to distribute meat throughout the rice.
Sprinkle about half of the shredded cheddar cheese over the mixture, reserving the rest for topping later.
Cover the baking dish tightly with foil, making sure it is sealed well around the edges.
Bake the casserole for 45 minutes, then carefully remove the foil and check the rice for tenderness.
If the rice is still firm, cover loosely and bake another 10 to 15 minutes, checking again as needed.
Once the rice is tender and most liquid is absorbed, uncover the casserole and sprinkle on the remaining cheddar cheese.
Return the dish to the oven and bake 5 to 10 minutes, uncovered, until the cheese is melted and lightly browned.
Let the casserole rest for 10 minutes after baking so the rice sets and slices hold together better.
Scoop into bowls or squares and serve hot, optionally with a fresh green salad or steamed vegetables.

Jennifer Wojcik, Kelowna: Super fantastic. My hubby needed something hearty and this really hit the spot. I did read through the recipe and did some changes. First I browned the ground beef with the diced onion and drained it really well. Then I stirred in a little garlic powder and a pinch of paprika with the salt and pepper. I used beef broth instead of water and added just a small splash more since my rice always seems thirsty. Mixed the soup and sour cream together first, then stirred in the rinsed rice so it was coated good. Baked covered about 50min, then took the foil off and sprinkled the rest of the cheese on top. Let it go another 10min uncovered till it was bubbly and the cheese browned a bit. Let it rest about 10min before cutting and it set up nice. Definitely a keeper recipe.
